For me the answer is yes (also at the cinema) with the proviso that the knitting is simple and the book not too strenuous.
I wouldn’t try to read anything heavy or non fiction but a light hearted fiction or page-turning whodunnit is fair game.
As for the knitting - a plain vanilla sock in the round is the perfect reading companion. Although a hat, sleeves or the body of a stockinette sweater also afford lots of knitting time.
As for the practicalities, I find it easier to knit while reading my Kindle. But I’m not above propping a paperback book open with something suitably heavy if the need arises.

Most of my reading is done in audiobook form, and I can absolutely knit and listen concurrently. Not sure I could Kindle-and-Knit, though — having to stop and turn the pages would probably annoy me. 😂🤷♀️
I can read but it has to be on my iPad or phone rather than a proper book otherwise it closes itself. I can also knit at the cinema (most of the time but cinemas here in Denmark seem to be extra dark…)
